Opted out of class today to go spend the afternoon with Gianfranco, the world’s friendliest baker, to learn how to make a batch of torrone from scratch. Best 3 pound weight gain yet.
Hazelnuts, honey, egg whites, mix, lay out, lick clean, lift, press, eat and repeat.

So I’ve been shadowing a baker (ciao Gianfranco!) all week for an ethnographic study on a food space. 10 pounds in bacis, foccacias, gianduias and piadinas later, I’m left with tight pants, large cheeks, a vague memory of what my body used to be and a self imposed gluten diet.
Oh the plights of a gastronome…
